Yeah yeah yeah I know your properly sick to death of quinoa this and quinoa that but this wonderful nutty little number hails originally from the Andean region of Peru, Bolivia, Ecuador, Colombia and Chile and was domesticated 3,000 to 4,000 years ago for human consumption so we are a little behind our South American brothers and sisters to the wonders of this delightful little grain, it's cooked similar to rice and is high in protein so on that note here is a different take on the Japanese nori roll ....

Quinoa, tuna & avocado nori rolls

1 cup quinoa

3 tbsp sushi seasoning

2 small ripe avocados

160g tin tuna drain well

2 tsp wasabi seed mix*

Sea salt & cracked black pepper to season

1 tbsp finely chopped coriander

¼ tsp ground ginger powder

Method

1.Follow the cooking instruction on the quinoa packet (I use a small rice cooker rather than a pot as I find it easier) when the quinoa is cooked transfer to a bowl, mix through the sushi seasoning, cover with cling wrap and allow to cool.

2.In a separate bowl mash the peeled avocados with the wasabi mix*, ginger powder, fresh coriander and season to taste with the salt & pepper.

Dipping sauce

1 tsp mirin

1 tsp dark soya sauce.

Mix two sauces and serve.

I also squeeze a good dollop of wasabi paste on the side but be careful as that stuff really packs a punch.

*If you can't find a wasabi seed mix add a 1/2 tsp of wasabi paste with 2 tsp mixed sesame seeds (Asian markets, health shops) Rice cookers are available almost every where now, argos, Asian markets,some supermarkets, Amazon and electrical stores.

For another option if you don't fancy the seaweed wraps try it as a super food salad.

Quinoa salad with pear & walnuts (see photo below)

Use above recipe without the nori sheets and tuna, add chopped walnuts and thin slices of ripe pear with a good pinch of unwaxed organic lemon zest (Aldi)

I always keep a stash of fresh lemon zest in my freezer for handiness

Or the other alternative is to add cherry tomatoes, zucchini spirals, thinly sliced red peppers & toasted pine nuts to make a lovely light colourful healthy salad ...
