As I missed the silly season of food blogging due to no wifi for 4 weeks and yes I nearly pulled my hair out, so let's just say helloooo 2016....

Like nearly everyone on our little plot of green I too am on a New Years health kick (I actually started last August but I needed to reboot in a big way after the festival celebrations) so here I am at home and starving at 8pm, the rain was pelting out of the heaven last night so there was no chance of me popping out for a healthy treat so it was off to the cupboard I go and these little suckers is what I made, a light healthy snack that would curbed my craving for something tasty.

lets get cooking or in this case no cooking required how cool is that !! All the following ingredient were bought in Aldi except the coconut oil (health stores, supervalue, dunnes & tesco)

2 cups dried mix fruit (prunes, apples, apricots)

6 pitted dates

1 cup raw cashew

1 cup walnuts

1/2 cups sunflower seeds

1 cup almond meal

2 tsp ground ginger

1/4 cup coconut oil (gently melted)

Raw sesame seeds for rolling

Put all the above ingredients except the melted coconut oil into a food processor, pulse for 30 seconds at a time until the mix forms a dough like consistency, add the coconut oil blitz for another 30 second, transfer to a bowl. In another bowl add the sesame seeds.

Scoop out about a tablespoon of the mix and roll into firm bite size balls, toss in the sesame seeds, place on a tray and refrigerate until firm (about 20/30 minutes).

Storage...

Keep in the fridge in a airtight container. These little delightful devils will last for about a month in the fridge however I'd be surprised if they last that long once you have tried them..

They also freeze well
