As I'm on low carb food life journey, my recipes include mayonnaise, not the shop bought stuff I make my own and trust me it really is easy, so here it is..

Home made mayonnaise

2 large organic egg

2 tsp white wine vinegar

½ tsp Dijon mustard

1 cup avocado oil

Salt n pepper to taste

Place all the Ingredients into a container or bowl and blend with a electric hand mixer until thick, about 30 to 40 seconds

Season to taste

Tips & Tricks

For a garlic mayo add 1 small garlic clove, finely grated

For chive mayo add 1 small garlic clove, finely grated and 2 tbsp finely chopped chives.

As mayonnaise is such a versatile condiment I also like to add chilli, sumac, lime, lemon, pretty much any seasoning that takes my fancy, just add a little at a time for quantities and keep tasting until your taste buds go oohhh yeah that's it…
