After a wonderful weekend at the taste of Dublin with all my gal pals I decided a wowza dish just had to be had on this sunny Monday evening so here it is.....

Prawn taco and minted guacamole

Ingredients

For the Mint Guacamole:

2 large ripe avocados

½ small red onion finely diced

1 clove garlic, peeled and crushed

1 jalapeno, de-seeded and finely chopped

Juice and zest from 1 lime

2 tablespoons chopped fresh mint

Sea salt and freshly cracked black pepper to taste

For the rest of the dish:

1 kilo large prawns, peeled, deveined, and pat dry with paper towels

2 teaspoons Cajun spice

2 garlic cloves peeled and crushed

1 lime, juiced

olive oil

Sea salt and freshly ground black pepper

5 bamboo skewers, soaked in water for 30 minutes

12 flour tortillas, grilled or warmed

Garnish

1 large tomato, chopped

1/2 red onion finely diced

a handful of chopped coriander

Lime or lemon wedges, to serve

Mash the avocados with the rest of the guacamole ingredients or whizz everything together in a food processor or mix well with a fork. Seal with plastic wrap and set aside.

Toss the prawns in the Cajun spice, chopped garlic, lime juice, 2 tablespoons olive oil, and season with the salt and pepper Skewer the prawns onto prepared wooden skewers and set aside

Grill the prawns for 3 minutes on one side. Flip and grill for another minute on the other side. ( if your not bother to fire up the barbie or you don't have a grill pan seared with a little olive oil in a hot pan.

To assemble the tacos, warm the tortillas or place them on the grill to toast slightly. Spread some guacamole on each tortilla, and top with the prawns, chopped tomato, diced red onion and fresh coriander

Serve with a squeeze of lime or lemon and an iced cold beer...
