So this freedom Friday dish I kept it clean and light as I have had a week of freedom Friday's on my hols ....

I bought all the ingredients in Aldi, I came up with this dish for a couple of reasons, one I just love baked sweet pots from way back when and two as a plus the cherry tomatoes and sweet potatoes were on special for only 49c. I have to be honest I do my majority food shopping there, apart from the regular prices being brilliant, the specials are something else! So here we go ...

Serves 3/4

350g diced chicken breast pieces (€3.49)

1 tbsp olive oil

I bag sweet potatoes, wash and leave the skin on (49c) I got 6 in the bag

Marinade for the chicken

3 tbsp mango chutney (whole jar cost only 79c)

Juice of 1 lime

2 garlic cloves peeled and crushed

1 tbsp white wine vinegar

1/8 tsp paprika

Sea salt and fresh black pepper to taste

Mix all the above in a bowl, add the diced chicken, coat well, cover the chicken and refrigerate for at least 24hrs.

Salsa

1 pack mixed fresh chilli's thinly sliced

Use the large red, green, yellow and black chili's from the pack(freeze the rest for another time) thinly slice chilli's diagonally.

1 punnet cherry tomatoes washed and quartered

Juice of 1 lime

1 medium red onion peeled and thinly sliced

Salt and pepper to taste

Mix all the salsa ingredients in a bowl and set aside

Method

1.Preheat the oven at 180c, place the sweet potatoes on the wire rack with a tray under them to catch any juices from the sweet potato, bake for about 20/25 minutes or until soft.

2.In a medium to large size fry pan or skillet heat the oil on high, add the chicken and sauté for 4/5 minutes until the chicken is white and slightly caramelised, add in the rest of the marinade, toss well.

3.Remove from the heat, cover the pan with a lid and allow to rest for 15/20 minutes. This process keeps the chicken lovely and moist.

4.Slice each sweet pot down the centre, split open slightly, load the chicken pieces evenly including the juice, top with salsa and serve
