This dish I have been cooking for over 20 years so needless to say I have served it at many a gig as we found that bands and artists alike when touring often preferred a tasty healthier option so wecooked this at the the following gigs the Red Hot Chilli Peppers, The Corrs, REM, U2, Robbie Williams, Tracey Chapman, Don McLean, Glen Campbell, John Hurt, Charlize Theron, Def Leppard, Eddie Izzard and some I won't bore you with the rest however I made this last night for the most important person....me mammy !
Caramlised Salmon with a miso, honey soy glaze
4 salmon fillets (remove skin)*
3 cloves garlic, finely chopped or crushed with a garlic press.
1 1/2 tsp grated fresh ginger.
1 tsp miso paste.
6 Tbsp honey.
4 Tbsp soy sauce.
2 tsp sesame oil.
To garnish (optional).
Toasted sesame seeds.
1 red chilli deseeded thinly sliced.
1 spring onion thinly sliced.
Method.
In a bowl add the soy sauce, honey, miso paste, ginger and garlic and whisk well.
Place marinate and salmon fillet in a ziplock bag or lidded container, refrigerate for at least 30 minutes or over night.
In a oven proof dish bake your salmon in a preheated oven at 180 C (350 F) for 15/20 minutes (depending on thickness of the salmon fillets) I personally like my salmon cooked through unlike most chefs, with a pastry brush baste the salmon with the marinate half way through cooking.
Pour remaining maranade into a small sauce pan, over a medium heat, bring the sauce to a boil and simmer for about 5 minutes or until reduced or coats the back of a spoon.
Pour the sauce over the Salmon if desired or on the side, sprinkle w/ toasted sesame seeds & finely chopped spring onions.
I personally like to serve this dish on a bed of shredded fresh baby spinach & steamed green beans or steamed rice however in the warmer weather it's great for a picnic, barbecue or when I'm on the road (there is that changing shape thing again) I have it with a salad cold, it's just as nice.
*The salmon doesn't need to be portion sized filets, a solid piece works just as well but might need to be cooked a little longer again depending on the thickness of the salmon.
Today's tip- Supervalue salmon is 1/2 price at the fish counter nation wide. Whata bargain !
