So it's January and everyone seems to be on a health kick, well I have to admit I fell of the health wagon a bit over the past week so I need to restore myself. I love this salad combination, the taste, the healthiness, the ease of preparation and it looks so so pretty...
1 cup bistro lettuce* ( most supermarkets stock it)
2 small rounds of fresh Goats cheese
5 vine ripened cherry tomato cut in half
¼ cup walnuts
½ avocado diced
1 cup baby spinach leaves
¼ small red onion finely shaved**
Dressing
Drizzle Olive oil
Drizzle balsamic vinegar
Put the bistro, baby spinach, cherry tomatoes, walnuts, red onion in a large bowl, drizzle with the olive oil and balsamic vinegar, gently toss the salad mix, transfer to a serving bowl add the avocado and goats cheese. Garnish with shredded beetroot and walnuts.
*bistro is lambs lettuce mix with shredded fresh beetroot if you can't find it use fresh raw beetroot and shred with a grater. You will need a bag of lambs lettuce.
**use a potato peeler to shave the onion, it's quick and easy.
