So we had a barbecue this evening. One dish that is always requested and I serve it at every buffet, gig and party is my mango salsa.If you can't get fresh mango fear not canned mango works just as well so here we go ....

Serves 8/10

2 large ripened mangoes peeled, stone removed and dice the juicy flesh*

1 medium red onion finely diced

1 large red pepper remove seeds and membrane, finely diced

1/4 cup sugar syrup*

1/2 cup sweet chilli sauce

4 tbsp white wine vinegar or white balsamic vinegar

20g fresh coriander finely chopped including the stems

Cracked black pepper to taste

2 small red chiles seeds removed & finely chopped (optional)

*if you are using canned mangoes replace the sugar syrup with the juice in the can

Throw all the above into a bowl mix & serve


I like my salsa slightly chilled before serving but it's not necessary

Mango salsa goes great with char grilled marinated chicken, fish, char grilled king prawns & salad
