We were catering at Slane castle, the Verve were the head line act that year with Robbie Williams doing support. So Robbie came out with "Let Me Entertain You" as his opening song and blew the crowd away. So, say needless to say he stole the show and came back the following year as the head line act.

Right back to the margaritas. It was the eve of show day and my mate Vivian and I were exhausted after a very long day of prep, setting up, cooking and sorting out everything in general in catering. Vivian said I want one of your margaritas in her lovely Liverpool accent. So me being me churped up and said hell yeah. So there we were siting on milk crates behind our marquee, cigar in one hand and a frozen margarita in a jam jar in the other enjoying the peace. Next thing these blokes came from no where (it's was 2am) wanting our frosty jars of joy !!! I said not a chance I'm done for the day. However, Viv piped in and said if you peel that bag of carrots we will give you one. Thinking there is no way a band member would peel a bag of carrots at 2am in the middle of a field ....we were wrong. He ask for the peeler and the bag as he made the gesture I didn't make him peel the carrots and he got margarita's for himself and the lads on the tour bus .....

You will need a liquidiser or a magic bullet

2 cups tequila

1 cup fresh lemon juice

1 cup fresh lime juice

1 cup sugar syrup*

1/2 bag ice (the regular size bags in off licenses and supermarkets)

Throw all the above in a liquidiser and whizz till frozen serve drink & be happy

*sugar syrup

In a small pot add 2 cups sugar & 2 cups of water. Stir the mix till the sugar dissolves, bring to the boil and simmer till the liquid coats the back of a spoon. Set aside and allow to completely cool. Sugar syrup willhold in the fridge for weeks
