Well I'm not sure if you feel the same but are we heading back into winter, it's absolutely freezing where I am so for my freedom Friday dish I wanted a comfort warming bowl of gorgeousness and as I haven't had my seafood chowder for some time that is what I decided to make, it's was rich, flavoursome, yummy and very filling, As I had a few serves left over I decided for Sunday lunch I would turn the chowder "soup" into a fish pie for 4 and to make it extra easy I bought Aldi's real frozen mash potato (79c per bag, see past post for visual) just add a good knob of butter a little splash of milk, seasoned with salt n pepper and whoop Sunday lunch is done !

If you are making the chowder fresh today it needs to cooled completely. Preheat the oven to 180c degree.

Transfer the fish mix to a casserole or serving dish, top with the creamy mash and grated cheese (optional) and bake for 30 mins or until lightly golden and heated though. I used two bags of the mash potato as I wanted a thicker layer of potato and 40g of grated Gruyèr but cheddar or fresh parmesan worked just as well.
